Beef and Ginger Stir-Fry Recipe

Ingredients
- 2 tablespoons unseasoned rice vinegar
- 5 tablespoons soy sauce (use gluten-free soy sauce for a gluten-free option)
- 1 tablespoon honey
- 1 tablespoon freshly grated ginger
- 1 teaspoon chili pepper flakes
- 1 teaspoon ground cumin
- 1 to 1 ½ pounds top sirloin steak
- 1 tablespoon cornstarch
- 2 tablespoons vegetable oil (preferably peanut)
- 1 tablespoon dark toasted sesame oil (optional)
- 3 to 4 green onions, sliced diagonally, about ½ inch apart
- 2 cloves garlic, thinly sliced
- 2 to 3 hot chilies (preferably red serranos), seeded and sliced
- 1-inch knob of ginger, peeled and cut into matchstick shapes
- ½ cup chopped cilantro, loosely packed
Method
- Chill and Slice the Steak:
Chill the top sirloin steak in the freezer for 30 minutes to make slicing easier. Cut the steak crosswise into ½-inch thick slices, then slice each piece lengthwise into strips. - Marinate the Beef:
In a medium bowl, mix together the marinade ingredients: soy sauce, rice vinegar, grated ginger, honey, chili flakes, and cumin. Add the steak strips to the marinade, ensuring they are well coated. Let it marinate in the fridge for at least 30 minutes, or up to 4 hours. - Prepare the Cornstarch Slurry:
In a small bowl, combine the cornstarch with 2 tablespoons of cold water to create a slurry. - Brown the Beef Strips:
Heat vegetable oil (and sesame oil, if using) in a wok or large sauté pan over high heat until very hot. Pat the marinated beef dry, then sauté in small batches (no larger than what fits in your palm) for about 1 minute, or until browned on the outside but rare inside. Transfer the cooked beef to a bowl. - Stir-Fry the Aromatics:
After cooking all the beef, add the sliced chilies and garlic to the pan. Stir-fry for 30 to 45 seconds. Then, add the julienned ginger and continue to cook for another 30 to 45 seconds. - Combine Everything:
Return the beef to the pan, pour in the cornstarch slurry, and add the scallions. Mix everything well and cook for an additional minute. - Finish and Serve:
Turn off the heat, stir in the chopped cilantro, and serve hot with steamed white rice.
